Alkaloide werden einem Lebensmittel in der Regel nicht absichtlich zugegeben, es handelt sich hierbei um natürliche Inhaltsstoffe.

Selbst diese sind nicht immer harmlos für den menschlichen Organismus – ein prominentes Beispiel sind die Pyrrolizidin- oder Tropanalkaloide.
